Sweet Onion Relish (Seeni Sambol)

Seeni Sambol has always been a very delicious add on to many traditional Sri Lankan main courses such as Hoppers, String Hoppers, Milk rice or even rice. It is a fine mixture of onions and a lot of other spices which are genuinely of Sri Lankan taste. To make a delicious Seeni Sambol first peel the onions and chop them to into fine pieces. Then take a pan and heat the oil in a low flame and then add spices such as cinnamon, cloves, cardamom, curry leaves. To give better tastes add some maldives fish as well. After the spices are fried to the required level add the chopped onion and fry till golden brown, be careful not to over fry the spices. Adding some sugar will also add to the taste of the mixture. When done, take the sambol out of the pan and its ready to serve with a delicious main dish.
