Watalappan is a desert just like a pudding and it is slightly juicy. Watalappan is enjoyed by any person at any age for its sweet and milky taste. Jaggery, coconut milk/condensed milk, eggs are used as the main ingredients to prepare a Watalappan. Since jaggery is used as the main ingredient it takes a brown color. Anyone who has tasted Watalappan would know the unique softness of its texture.
Jaggery is first cut in to pieces to make it easier to dissolve in coconut/condensed milk. Then eggs are added along with some cardamoms, chopped cashew, sultana and nutmeg powder to make it tastier. Once the mixture is well stirred it is put in to a bowl and steamed with vapor or it is baked nearly for an hour closing the mouth of the bowl with a piece of cloth or a foil paper. Once it is cooked, it should be chilled before tasting. The bowl could be unmolded if preferred inorder to cut into pieces.
