Coconut Roti is very famous in Sri Lankan cuisine, which looks like a flat thin cake. Roti becomes one of the main meals of Sri Lankans which can be tasted with spicy Lunu Miris, any other dish, or with sweet tastes like honey, jaggery or bananas. To make Coconut Roti we need flour, scarped coconut and a pinch of salt to taste.
All those ingredients are mixed adding warm water gradually until it becomes a dough. Once it is done, the big dough can be made in to small dough which is sufficient for an individual serving. The dough should be flattened to look like flat thin cake. It could be flattened by palms. A cutting board or a tray could be used to spread the dough and make it flat. Using a floured surface makes it easier to prepare it. Then the flattened dough should be placed on a pre heated iron skillet. After 1-2 minutes it should turn over. Both sides should be cooked. Once it is well cooked it is in slightly golden brown color with several brown spots.
